The Online Tests:
Anyone who wants to provide information or anything related to all this can contact Crunnie#0001 on Discord.
The Online Tests versions are the oldest versions of Fortnite. In order to participate in one, you had to receive an invitation. The players who participated in these versions received exclusive banners within the game. In addition, many players have confirmed that they had direct contact with the developers to give them feedback. Currently, only version 6.5 has been fully recovered[1] and version 10 partially (this is located inside the O.T. 6.5 archives folder).
There were 11 Online Tests (the exact amount with the extra versions is 20). Playing an O.T. was completely free, but you had to have a code or an invitation to play them. They were designed in Unreal Engine 4 and some in Unreal Engine 3 .
One of the reasons why many players want to find these versions is because they contain a lot of information about the game that has never seen the light of day. For example, in version 6.5 a discarded enemy called "Werewolf"[2] was discovered that would appear in the "Fortnitemares" event.
The non-public versions:
The game obviously had non-public versions (the amount is unknown) that only the workers of Epic Games (the company that created the video game) have. One of the few images of this version is this one that was seen at the 2013 Game Developers Conference. The design is very similar to the "final" version of the first Online Test of the game, they were designed in Unreal Engine 3.
Update July 2022:
Some time ago one of the private builds of Epic Games was discovered, the build is exactly the "Project Fortress", but no one had released information about this build until now, it contains lots of information about the game, including the original story of the game, you can see a gameplay of this version here.
The explanation of limbo:
The design document states that periodically, non-player-created buildings in the world would be enveloped in a mist creature storm. When this happens, all players in the building are killed, and when the storm finally passes, the building will be replaced with a brand new building (thus keeping a steady stream of new loot opportunities introduced into the map)
However, if the players place their power generator in the building before it's consumed by the storm, then all the players inside the building instead get transported to Limbo, the mist creature's home world.
Because it's night time when this happens, Limbo is mostly empty of monster creatures, so the player's can explore and mine unique resources from Limbo. There is a giant obelisk at the center of Limbo which is the gateway between their world and our world. The player's ultimate goal in the game is to destroy or "plug up" the obelisk.
Players are eventually pulled out of Limbo and kicked back into the real world. If they happen to be inside another "sucked into Limbo" human building, then they ride that building back into the real world and end up in a completely different map in the human world. In this way, Limbo serves as a sort of hub allowing players to transfer between different human world maps.
Conclusion:
Maybe in this version of the game there would’ve been a normal and good ending where the normal ending is to destroy the strongholds and the good ending is where you destroy the limbo gateway (this is a theory).
The original name of Fortnite:
In the build "Project Fortress" an early version of the Fortnite VGA trailer from 2011 was found, the most curious thing is that at the end of this version instead of "Fortnite" appearing "Fortnight", this indicates that the original name for the game was that.

Extra things:
The game menu looked very simple and without details, this is because it is a private version of Epic Games (it was never tested with the public as it happened with the Online Tests), the game icon is the weirdest thing about this.

The original Fortnite PvP mode:
In these versions there was no "Battle Royale" mode, so everything was about the original game mode called "Save The World". In these versions, a PvP mode was being developed, and some tests were done with players[3][4].
The public versions:
Finding the Online Test 6.5 (discovered in 2021) was pure luck, because the vast majority of users who played in the Online Tests have not saved images, videos and files of the versions. That is why it is very difficult to find someone that still has Online Test files. People have tried to contact users with the role "Alpha Explorers" on the official Fortnite Discord server, but all have already said that they no longer have any files from any Online Test.
There is little knowledge of these versions and little information on the internet because Epic Games was very strict about sharing photos and videos, including making streams showing the game, since it was, as indicated in the Online Test 6.5, a, "Top Secret Alpha Test!!"
